Vegan Doughnuts

Recipe for Vegan Doughnuts

  • 50g of dairy-free margarine
  • 120ml of soya milk
  • 1.5 litre of sunflower oil
  • 250g of plain flour
  • 1 ½ teaspoon of baking powder
  • ½ teaspoon of sea salt
  • 50g of golden caster sugar
  • Vanilla sugar:
  • 1 vanilla pod
  • 50g of caster sugar

Preparation Method

  1. Start by melting the margarine, soya milk and 2 tablespoons of sunflower oil into a small pan on a medium heat. While the ingredients are melting, in a large mixing bowl, mix together the flour, baking powder, salt and sugar before making a well in the middle. Tip the melted ingredients into the centre of the well.
  2. Slowly mix all the ingredients together, until you have created a thick dough. Divide the dough until 24 equal sized dough balls.
  3. With the left over sunflower oil, pour the oil into a medium sized pan over a high heat. Let the oil heat up, doing a chopstick test to determine that the oil is hot enough. When the oil is hot, reduce the oil slightly before using a slotted spoon to gently add the dough balls into the oil. Leave to cook for 3-5 minutes, turning the balls slightly to evenly cook all over.
  4. While you are cooking the donuts, you can now make the vanilla sugar in a large mixing bowl. Halving the vanilla pod length ways, scrape out the vanilla seeds. Place the vanilla seeds with half of the sugar into a pestle and mortar before grinding together. Once ground together, tip both ingredients into the prepared mixing bowl with the remaining sugar.
  5. Time to remove the cooked donuts, placing them onto some kitchen paper to drain. Leave to cool for a few minutes before rolling in the vanilla sugar and placing onto a plate to cool.
