Traditional Welsh Cakes

Friday 1st March is St Davids Day! Celebrating this patron saint, cook up a traditional Welsh feast, including these delicious Welsh Cakes.

Recipe for Traditional Welsh Cakes

Ingredients

110g of salted butter cut into cubes
225g of self-rising flour
85g of caster sugar
Handful of sultanas
1 egg, beaten

Preparation Method

Start by rubbing the butter cubes into the flour to create breadcrumbs. Add into the bread crumb mixture the sultanas and the sugar before stirring in the egg.
Mix all the ingredients together until you have created a ball of dough. Add a splash of milk if the mixture is too dry.
Take your dough and on a floured surface, using your rolling pin, roll out the dough until it is roughly 5mm thick.
Using your round cookie cutters, cut the dough into rounds before placing to the side.
Using either your Chasseur Crepe Pan, place the pan on a medium heat. Rub some butter onto the pan before wiping away any excess butter.
Once the pan is hot, place the Welsh Cakes onto the pan and cook anywhere between 2-4 minutes on each side or until the cake has turned a caramel brown colour. Cook the rest of the Welsh Cakes.
When cooked, remove from the pan and dust with caster sugar while still warm.
Leave to cool, cut in half and sandwich together with jam of your choice.
