Thai Chicken Kebabs

These are so easy to put together for an evening meal or BBQ with friends. Serve with rice and some salad.

Recipe for Thai Chicken Kebabs

Ingredients

6 large chicken breasts, cut in pieces

For the marinade

50g/2oz coriander, roughly chopped
Juice of 3 limes
dash of soy sauce
1 tsp grated ginger
1 tbsp honey
half a chilli, de-seeded and finely chopped
dash of vegetable oil
Sea salt and fresh ground black pepper

For the cooking

Bamboo skewers, which need soaking for at least an hour

Preparation Method

Pre-heat the oven to 175C or light the BBQ. Combine all the marinade ingredients in a bowl. Add the chicken pieces and marinade for 20 minutes.
Heat a grillpan/BBQ rack to smoking hot. While it is heating, thread the chicken onto the skewers.
Chargrill the skewers lightly on the grillpan/BBQ rack and finish them off in the oven (if using a grillpan instead of BBQ) for 10 minutes and serve.
