Recipe for Roast Potatoes with Lemon & Thyme
Ingredients
1kg new potatoes, scrubbed
3 tbsp olive oil
1 tsp freshly ground pepper
1 lemon, zest
2 tbsp fresh thyme leaves
1 tsp sea salt flakes
Preparation Method
Pre-heat the oven to 220°C/428°F.
Gently boil the potatoes in a large pot for 10 minutes or until just tender.
Pour 2 tablespoons of olive oil into a large roasting pan and put into the pre-heating oven for a few minutes to warm the oil.
Drain the potatoes well and carefully layout on the warmed roasting tray. Sprinkle with the cracked pepper and drizzle with a little more olive oil.
Roast in the oven for 45 minutes, turning once or twice to allow the potatoes to roast evenly.
Once the potatoes are golden and crisp, remove from the oven and arrange on a serving platter or in a large serving bowl, toss through the lemon zest, fresh thyme and sea salt flakes and drizzle over any extra pan juices.
