Mater Paneer

A simply delicious vegetarian dish, this pea and cheese recipe is the ideal midweek dinner for those busy and on the go.

Recipe for Mater Paneer

Ingredients

  • Ingredients:
  • 1 tablespoon of sunflower oil
  • 225g of paneer
  • 2 ½ cm of grated ginger
  • 1 teaspoon of cumin
  • 1 teaspoon of turmeric
  • 1 teaspoon of ground coriander
  • 1 green chilli, finely sliced
  • 4 large ripe tomatoes
  • 150g of frozen peas
  • 1 teaspoon of garam masala
  • Pack of fresh coriander, roughly chopped
  • Naan bread or rice to serve

Preparation Method

  1. Start by adding some oil to a frying pan over a high heat. Wait until the oil is hot before adding the paneer cheese and then turning down the heat.
  2. Fry the cheese until the edges turn brown before turning the cheese over to brown the other side.
  3. When cooked remove the cheese from the pan and allow to drain on kitchen paper.
  4. In the same pan that you used to cook the cheese, add the ginger, cumin, turmeric, ground coriander and chilli, frying for around a minute.
  5. Add the tomatoes before using the back of a spoon to mash the tomatoes to create a sauce.
  6. If the sauce is too thick, add a splash of water before seasoning with salt and pepper.
  7. Add the peas into the mixture before allowing to simmer for a few minutes.
  8. Stir and sprinkle with the precooked cheese and garam masala.
  9. Serve alongside either naan bread or rice.
