Recipe for Marmalade and Whiskey Bread and Butter Pudding

8 slices of white bread, remove the crusts
50g of soft butter
4 tablespoons of orange marmalade
300ml of full-fat milk
248ml of double cream
3 large eggs
1 vanilla pod seeds
4 tablespoon of golden caster sugar
1 tablespoon of whisky
Icing sugar for dusting- optional

Preparation Method

Start by buttering each slice of bread on either side before spreading 4 of the slices of bread with 1 tablespoon of marmalade. Pop the remaining bread on top to make 4 marmalade sandwiches. Cut the bread into triangles and nestle into rows inside a large baking dish.
Preheat oven to 160°C.
Beat together the milk, cream, eggs, vanilla, sugar and whisky before pouring over the bread. Leave the bread to soak in the mixture for around 30 minutes.
Take the remaining marmalade and dot spoonfuls across the pudding before dusting with icing sugar.
Place into the oven to bake for anywhere from 45 minutes to one hour. You can tell when the pudding has cooked, as it will rise and start to caramelise.
