Margarita Cupcakes

We often feel the need to come up with an excuse when we are wanting to treat ourselves, yet with these Margarita cupcakes, no excuse needs to be made. A sweet take on the Mexican classic, give your cupcakes a makeover and turn them into this adult-only treat.

Recipe for Margarita Cupcakes

Ingredients

  • 220g of all-purpose flour
  • 2 teaspoons of baking powder
  • 1 teaspoon of salt
  • 115 grams of softened butter
  • 200g of granulated sugar
  • 2 eggs
  • 2 limes zested and juiced
  • 2 large tablespoons of tequila
  • 1 tablespoon of vanilla extract
  • 120ml of buttermilk
  • For the icing:
  • 230g of softened butter
  • 310g of caster sugar
  • 1 tablespoon of lime juice
  • 2 tablespoons of tequila
  • Pinch of salt

Preparation Method

  1. Preheat the oven to 220°C and begin by greasing a cupcake tin before lining with baking paper.
  2. In a large mixing bowl whisk together the flour, salt and baking powder.
  3. With a mixer, beat together the butter and sugar until it has turned a pale, light colour with a fluffy texture.
  4. When the butter and sugar has turned to the intended texture, add one of the eggs and keep mixing thoroughly until it has all been mixed.
  5. Once the egg has been added, crack another egg into the mixture.
  6. Make sure that all the mixture from around the sides has been brought into the centre of the bowl before adding the lime juice, lime zest, tequila and vanilla extract. Mix thoroughly until it has all be combined.
  7. Once it has all been thoroughly combined, add the flour and baking powder slowly, a bit at a time.
  8. Pour the mixture into the cupcake tray and place into the preheated oven to bake for around 25 minutes or until the cupcakes have turned a light golden-brown shade.
  9. Once the cupcakes have been cooked, place them to the side to cool while you make the butter icing to go on top. Feel free to brush the top of the muffins with tequila for a stronger flavour.
  10. In a mixing bowl, whisk the butter for around 5 minutes before gradually adding the caster sugar, making sure that it has been thoroughly mixed before adding more.
  11. Increase the speed of the mixing for around 30 seconds before adding the lime juice, tequila and salt and beating on a medium heat until the mixture has turned fluffy.
  12. A spoonful at a time, decorate the cupcakes, garnishing with a wedge of lime if you prefer.
