Easy to make jam tarts, delicious with a generous dusting of icing sugar
12-15 minutes adjust for fan assisted ovens
Recipe for Jam Tarts
For the pastry:
12 teaspoons strawberry jam (or experiment with different jams)
255g plain flour
140g hard margarine or butter
6 tbsp cold water
a dusting of icing sugar
Preheat the oven to 180°C.
Sieve plain flour into a mixing bowl and then add margarine or butter. Rub in the margarine/ butter until it resembles breadcrumbs.
Add water tablespoon by tablespoon until you have a mix which represents a moist dough .
Grease a baking tray (or use a silicone baking mat in place of greasing as shown in image).
Roll out your pastry until it is approximately 1 cm thick and use heart shaped cookie cutters to make hearts approximately 8 cms in height. (Make border to support by using two cutters 8 cm and 6 cm used together recommended)
Put teaspoons of jam into each heart and add then use 1.5 cm heart cookie cutter to create heart to sit in centre of jam mix.
Bake until pastry is golden brown.
Place tarts on cooling rack and when cool dust with icing sugar.
