Homemade Fudge

Recipe for Homemade Fudge

Ingredients

  • 100g of butter
  • 550g of demerara sugar
  • 200g of golden syrup
  • 350ml of double cream
  • 1 tsp of vanilla extract
  • ½ tsp of sea salt flakes

Preparation Method

  1. Start by melting the butter in a saucepan. Once melted add the sugar, syrup and cream into the pan, stirring until all the ingredients have melted.
  2. While the ingredients are melting, line your chosen baking tray with grease proof paper.
  3. Bring the saucepan to a simmer over a medium heat, stir occasionally until the temperature of the pan reaches 116°C. Allow the temperature to reduce, stirring more when it reaches 100°C and only when the ingredient begins to catch, turn down the heat completely.
  4. Remove the pan from the heat before adding the vanilla extract to the pan along with the salt and beating the ingredients into the pan. Keep beating until all the ingredients have begun to thicken and have lost their shine.
  5. Pour the fudge into the prepared pan and leave to set.
  6. After an hour the fudge should have begun to firm up, once firm then cut your fudge into your chosen shapes and sizes.
