Deluxe Chocolate Cake

Cake mixture:

1. Start by preheating the oven to 190°C.
2. Line two cake tins with baking paper and butter on the base and sides.
3. In a large mixing bowl, beat together all the ingredients for the cakes, adding a pinch of salt. Once the batter is smooth, divide it between the prepared cake tins.
4. Place the two cake tins into your preheated oven and leave to bake for around 20 minutes. One way to tell whether the cake has cooked, is to enter a skewer into the center of the cake – if the skewer comes out clean when you remove it, you’ll know that the cake is cooked.
5. Place them on a wire rack to cool completely. While doing so, you can make the buttercream filling.

Buttercream filling:

1. Start by melting the chocolate in a microwavable bowl. Be sure that when melting the chocolate, you stir every 30 seconds. Once velvety smooth, leave to cool on the side for 5 minutes.
2. Mix the butter and icing sugar together in a bowl with a silicone spatula / wooden spoon until light in colour and smooth. Now sift in the cocoa powder with a pinch of salt and then add the melted chocolate and milk. Stir again until the mixture is smooth.
3. Using either a cake stand or  serving plate, you can now sandwich the cakes together with half of the buttercream mixture that you have just made.
4. Layer the other half of the buttercream on top of the cake and around the sides, being as generous as you would like.
5. For a truly indulgent treat, we recommend topping with shavings / shards of your favourite chocolate. Serve & enjoy!
