Deluxe Chocolate Cake

Recipe for Deluxe Chocolate Cake

Ingredients

Cake:
200g of golden caster sugar
200g of softened unsalted butter
4 eggs
200g of self-raising flour
1 teaspoon of baking powder
2 tablespoons of cocoa powder
½ teaspoon of vanilla extract
2 tablespoons of milk
Buttercream filling:
100g of chopped milk chocolate
200g of softened butter
400g of icing sugar
2 tablespoons of milk
5 tablespoons of cocoa powder

Preparation Method

Start by preheating the oven to 190°C.
With two round cake tins, butter the base and the sides and place baking paper around the tins.
In a large mixing bowl, beat together all the ingredients for the cakes, adding a pinch of salt. With the mixed ingredients, divide it between the prepared cake tins.
Place the two cake tins into the preheated oven and leave to bake for around 20 minutes. One way to tell whether the cake has cooked, is to enter a skewer into the centre of the cake and when you remove it, if it comes out clean, you know that the cake is cooked.
Take the cake out of the oven and leave to rest for roughly 10 minutes until it has cooled down completely.
Now the time has come to make the buttercream. Start by putting the chocolate in a microwavable bowl and placing into the microwave until the chocolate has melted. Be sure that when melting the chocolate, you stir the chocolate every 30 seconds. When the chocolate has melted, leave the mixture to cool on the side for 5 minutes.
With a fork, mash together the butter and icing sugar, switching to a mixing spoon later to create a smooth mixture. When the mixture is smooth, sift in the cocoa, a pinch of salt and then the melted chocolate and the milk. When all the ingredients have been added, stir again until the mixture is smooth.
Using either a cake stand or on a serving plate, you can now sandwich the cakes together with half of the buttercream mixture that you have just made.
With the other half of the buttercream, you can use it to layer on top of the cake and around the sides, being as generous as you would like.
With the finished cake, you can choose to eat it how it is or go the extra mile and decorate it with shards of chocolate, the choice is up to you.
