With the Chef’s Choice Model 316 you have the most up-to-date technology enabling you to delicately hone and polish the very sharp edges characteristic of thin oriental blades and it will do the job extremely quickly.
This sharpener has two sharpening stages that sharpen the edges at 15 degrees. Stage 1 hones each side of the edge with fine 100% diamond abrasives. Stage 2 polishes the edge using ultra-fine 100% diamond abrasives. Contemporary Japanese blades, Chinese cleavers and modern European style knives should be honed and polished on both sides of the blade. With this sharpener, in both stages the left and right sides of the blade are sharpened separately, which also enables you to hone and polish traditional single-beveled Japanese blades.
Highly precise elastomeric knife angle guides automatically position your knife at the correct sharpening angle for optimum sharpening, providing you with a reliable sharpening method that gives a factory quality edge in just minutes.

Because only fine and ultra fine diamonds are used in this sharpener, it is not designed to sharpen very thick knives such as some Deba type knives, thick sporting knives, heavier European chef knives, European cleavers and some of the thicker sashimi blades. These thicker knives can be sharpened in other Chef’s Choice sharpeners such as Models 120 and Commercial 2000.

Any Express orders placed before 2pm on weekdays should arrive the following working day (excluding when delivery would be on Saturday or Sunday). Any orders to be delivered to the Channel Isles, Highlands and Northern Ireland will take 2 to 4 working days, excluding Sunday delivery. We aim to dispatch all orders the day they are placed to ensure you receive your items as soon as possible.
Due to the massive increase in complexity and cost in sending small orders to Europe following Brexit, and to post-Covid transport issues affecting the rest of the world, we have reluctantly suspended all export sales from this site for the time being. At Dexam we want you to be delighted every time you shop, but if for some reason you aren’t totally satisfied with your goods, you can return them to us in their original condition. If you would like to return an item you have ordered through our website, please first check our terms below:
Up to 30 days from delivery
Within 30 days of the date you received your order you may return an item if it is faulty or you reject it because: it is not as described on our website, or not fit for the purpose intended or shown, or not of satisfactory quality, including durability. We will refund the full cost of the item and the cost of returning it by first class post to us.

Up to 90 days from delivery
Within 90 days of the date you received your order, you may return an item for any reason. The item must be unused and must be in its undamaged original packaging. We will refund the full cost of the product and the original postage for shipping to you.

Within 6 months of the date you received your order you may return an item if it is faulty. We may offer to repair or replace the item at our cost, including postage. The decision whether to repair or replace the item is at our discretion.

Up to 6 years from delivery
If your product does not last a reasonable length of time, we may refund you some or all of your money back. We will honour guarantees offered by us on our products and will consider refunds or replacements on a case by case basis. It is for you to prove that the product has not failed because of misuse.

NB – Please take care to fully inspect your goods to make sure you are happy with them before disposing of the packaging as failure to do so may result in us being unable to refund you.

Please have your Order Number handy when contacting us (to save you time), it is in the top right hand corner of your Delivery Note.
There is a returns slip at the bottom of the delivery note that came with your order. Please fill this in, detach and enclose the returns slip with the item(s) you are returning.
NB – You do not need to send back the delivery note as this is your invoice.
Please make sure you package all items securely and sufficiently to withstand delivery. Failure to do so may result in Dexam being unable to refund you.
Please arrange dispatch with your chosen carrier and ensure that you are able to track the return.
When we have received your returned goods and agreed a refund, we will give you a full refund of the amount paid, including original postage, within 7 days. If the product is no longer stocked by us, we may offer you an alternative or a refund. There are no rights to claim for faults that appear as a result of fair wear and tear.
